Recipe: Malibu Stacy

Nine years ago at my brothers wedding in Saint Martin, we got sick and tired of Pina Coladas. I mean they are tasty and all, but sometimes bar tenders stop blending them and without the blended ice they are taste a little less then impressive. Plus they get a bit heavy after a while.
That is when one of us decided not to give up on pineapple and coconut flavour but to shake it up a bit, the solution? Pineapple juice and Malibu rum. Thus the Malibu Stacy was born.
Yep it is named after the infamous doll from the Simpsons.
This isn't a difficult recipe, it is pretty self explanatory. Mix Malibu Coconut rum with pineapple juice and serve over ice. There you are done.  Ok, fine, here is a real recipe.
  • ⅔ cups Pineapple Juice
  • ⅓ cup Malibu Coconut Rum
  • Serve over Ice (I like some crushed ice)
Easy or not, this has become a go to summer favourite for me and my family. You can make just a glass of it or you can make a whole pitcher (my favourite drink to serve at a party, just go buy a two litre tin of pineapple juice).  It is also nice with a splash of soda water if you find it too sweet or want to take it a bit slower. I personally just cram my glass full of crushed ice and top it up as I need it.
The only warning I have for you is that it goes down easy, so don't over do it.
